Something purple in your plate…

This is a surprising recipe which at first may sound a little “eeewww”!

But taste it first and then let me know what you think…

Purple cabbage soup


  • 1 purple cabbage
  • 1 onion
  • 1 apple
  • 3-4 white potatoes
  • 3-4 cloves
  • vegetable broth as required


Cut the cabbage into julienne and wash it thoroughly. After a few minutes, take a look at the water where your cabbage was: yes, it’s blue! 🙂

Let it stew in a pan together with the onion, the apple and the cloves.

Add the vegetable broth and let it cook slowly. Once everything’s well cooked, chop the mixture into a food processor.

In the meanwhile, in another pan, cook the potatoes and once they’re done, mash them and add them to the cabbage mixture. Add salt to taste.

Mix everything together and dress it with some extra virgin olive oil.


You can eat it warm or cold. It’s a super-healthy dish and tasty too!
